why I started blogging (it's not what you think)

It's a good one.

Let's talk about how a stay-at-home pastor's wife on WIC grocery aid with two toddlers (who loved Taco Bell, Good & Plenty's and Lucky Charms) bought a laptop and a reconditioned Vitamix and started blogging about green smoothies, jackfruit tacos and homemade almond milk.

Let's go back to 2010...

Jackson was two years old and constantly sick. He had boogers galore, ear infections every other week and was always coughing. The pediatrician kept putting him on antibiotics, thinking it was "just another cold that toddlers catch." It went on for over a year. We were sleep-deprived, stressed and running on fumes. Poor Jackson wasn't running much at all.

My gut said there was more to it. Kids shouldn't be sick like this. A friend recommended I try a naturopathic chiropractor, something I had never heard of before. But at this point, I was desperate and willing to try anything!

In one visit, Dr. Emard used "applied kinesiology" to determine Jackson had a sensitivity to corn. Back then, Goldfish crackers, Cheerios, jelly, Aunt Jemima's syrup and ketchup all had corn syrup in them. And you betcha— I was feeding these to him every day, all day (and eating it right along with him!).

That very day, we removed all corn products from his diet (and mine— we were in this together). He was miserable at first, eating berries, plain goat yogurt and Ezekiel toast with grass-fed butter BUT three days later his cough, congestion, earaches and diarrhea were gone. He was a healthy and happy kid— running around the house. #nojoke

I learned that food can hurt us... and heal us.

During my Plant-Based Cleanse, we'll be following an elimination protocol so that you can pinpoint any food sensitivities you might have. I learned through this cleanse that I'm sensitive to gluten (and a Everlywell food sensitivity test confirmed it).

We couldn't afford to get sick

A few years later, we moved to Florida so my husband could co-pastor a church plant. We had no salary (we had to fundraise our salary... and we sucked at that) and had no health insurance. We could barely pay our rent and groceries we're tough, too. We relied on government WIC vouchers to buy eggs, milk, fruit, vegetables and oatmeal for the kids.

Without health insurance, we couldn't afford to get sick. The stress of it all kept me up at night, googling "how to not get sick" or "how to boost your immune system." That's how I first learned about green smoothies and started drinking one a day.

Since we started drinking smoothies, my family hasn't used NyQuil, Tylenol, antibiotics, Advil, or anything like that. We don't need to. We rarely get sick, and if we do, our immune systems are strong enough to fight it quickly with some sleep, smoothies, essential oils, tea and hot showers.

I learned the body can heal itself when properly fueled.

We can fuel our passions

When my kids were little, coffee and I were tight🤞. Coffee got me out of bed in the morning and coffee kept me going as the day dragged on. When bedtime hit, as exhausted as I was, I struggled to fall asleep. My mind was still churning from the caffeine. I would play Scrabble on my phone in bed while my husband slept beside me. After an hour or two, I'd eventually fall asleep. I'd pay for the crappy sleep the next day. The cycle was vicious.

When I started having a green smoothie for breakfast and again as my "afternoon pick-me-up," my energy levels skyrocketed. I didn't need so much coffee and I had so much energy that I started running ultra distances.

In the past ten years, I've run a Tough Mudder, Everglades Half Marathon, Disney World Marathon, Croom Forest 50k, 100k, and the Grand Canyon Rim to Rim to Rim (R3). The R3 was 49 miles, 11,000 feet of elevation gain and descent.

I'm now in my 40's with two teenagers and my body is stronger than ever. Who could have imagined that? Not me!

Thirteen years ago, I would roll off the couch to play with Legos with my kids. If I didn't start eating plant-based and gaining natural energy, none of this would have become my reality.

Now, I'm able to enjoy a cup of coffee in the morning with a smoothie and I have more energy as the day goes on. I sleep better at night, too. Like a rock.

I learned that lasting energy is found in proper nutrition.

F* Cancer

When I was 21, my dad was diagnosed with leukemia and given a four-year prognosis. He was 52-years old and had a lot of life to live. We weren't throwing in the towel— he was gonna fight for his life and we we're gonna help him.

My dad went through multiple rounds of brutal chemo. He drank smoothies, juiced carrots and ate more salads than anyone I know. My mom was always by his side and we were able to turn a 4-year cancer diagnosis into 17 years of living life to the fullest.

The summer before he took his last breath, my dad hiked to the top of the tallest waterfall in North America, Upper Yosemite Falls, with me and my kids.

Jackson and Clare will never forget that hike with their grandpa, and I will never forget how tough and determined my dad was to make it all the way to the top.

At 69 years old and four battles with cancer, my dad went to Heaven. As hard as this has been for all of us (I'm crying just writing this— I miss him sooooo much), I do count my blessings. I had the best dad a girl could ever ask for. My kids knew their grandpa and he taught them so much over the years. We were able to get 13 bonus years from his leukemia. For this, I'm thankful.

My family's journey is only a tiny fraction of the success those who embrace a plant-based lifestyle. The results are remarkable, but not surprising. The closer we get to nature through nutrition and fitness, the more we thrive. You won't find another Plant-Based Cleanse as passionate and dedicated to your health and happiness as we are.
